Every other month we host a themed potluck and games night with our game group. This month was breakfast for dinner! Jon and I love a good breakfast dish for dinner. We’re too lazy / too hungry in the mornings usually to make elaborate breakfasts, so they often get turned into dinner. Biscuits and Gravy, French Toast, and Shakshuka are all on our regular dinner rotation. But what to make for this potluck? Chilaquiles & Tater Tot Nachos, aka Totchos!

Chilaquiles & Totchos

I’ll be honest -breakfast dishes are a little hard to make beautiful and photogenic, but they sure are tasty! For the chilaquiles, I of course turn to Minimalist Baker. I’d heard of chilaquiles before but never made them until a few months ago. They are very similar to Migas, another breakfast dish we often make for dinner. For those who don’t know, migas are essentially scrambled eggs with crushed tortillas chips and other toppings like avocado and salsa. We used to make this all the time when all we had left of a bag of tortilla chips was crumbs. Chilaquiles are quite similar, but much saucier. They use chipotle peppers and sauce, and traditionally have fried eggs on top or even on the side. We obviously use tofu nowadays, but it works quite well and still uses up those crumby tortilla chipa, haha.




Totchos is a dish I recently stumbled across from Sweet Simple Vegan, a site I definitely need to check out more! This dish has a few parts, but altogether comes together pretty easily! First you bake some tater tots. While that’s going, you make make their scramble recipe or whatever one you like. Then the special part- the chipotle cheddar cheese sauce! If you’re doubling the recipe like I did, be careful you don’t also double the cheese recipe! It only calls for half a batch, and even then we had lots leftover. No complaints; it’s good stuff and we’re excited to throw it into other things!
The meal also included virgin mimosas, and our friends brought tasty breakfast potatoes, baked french toast, and peach sauce, yogurt, and blackberries for the french toast! Everything was amazing!






Freelancers
Freelancers is the silliest game in a group of silly games, haha. Plaid Hat made a trio of Crossroads games (Wandering Galaxy, Forgotten Waters, and Freelancers), and this is by far the silliest. The other two in the trilogy are campaign games, but Freelancers is a one-shot, albeit a long one (though there are ways to save it and break it into multiple sessions). In it, you are various characters of your choice, wandering around on different adventures. You make choices, do dice checks, fight baddies, level up your characters, and generally have the usual adventuring type of fun. One of the unique things is that it can be (but doesn’t have to be) played with an online app, that has lots of fantastic voice acting to really immerse you in the story. This is not my typical game, with all the listening of the story, as I am usually more of a strategic euro gamer, but every once in a while this is such a fun evening that does lend itself to great stories long after the evening is over. Worth giving a try for sure!
