We have found our go-to restaurant in Banff, and you need to know about it! My parents were actually first to find it, as they discovered it on their way to visit us back when we first moved here. We went on a trip to the mountains shortly after their visit, and have since been back around 4 or 5 times- basically every time we go to the Rockies lol.
Nourish Bistro states on its website that “since 2006, Nourish has been committed to providing fresh, innovative vegetarian and vegan cuisine. We serve globally inspired plant-based comfort food in a vibrant and intimate dining setting, created with the concept of sharing in mind.”
While their menu isn’t exclusively vegan, almost everything on their menu either is vegan or could be made so upon request. (Make sure to remember to request it if need be, I forgot once and the waiter also forgot to verify.) Our favorites here have been the poutine (when in Canada, eh?), the wild mushroom ravioli (hint of lavender!), the mac and squeeze (gluten free upon request!), nutella cheesecake, and the jungle pancakes. I’m currently drooling over a couple of new items on their menu (southeastern spicy noodles! tempura tacos! canela pecan tart!) One of our favorite traditions has become going for a long hike like the Tea House Trails at Lake Louise and then going to Nourish for brunch, getting a table outside for Gromit to join us and have delicious refueling food with a gorgeous view. Parking can be a bit tricky, so message me if you want to know our secret spot. I’m so excited it’s almost summer and hiking season is upon us; time to go back to Nourish!
